Easy Blackberry Wheat Ale


Hey, I’m new to the game, so I keep things very simple. This beer is very drinkable, smells great, tastes great, and looks like any other cloudy wheat beer.

  • Yields 2 gallons of brew:
  • A little over 2 gallons of spring water (no tap!!! get some freakin’ Ozarka)
  • 1.5 lbs of dry wheat/25% barley extract
  • 2 tbls pellet hops (I use wheat beer hops, but you can choose)
  • 10 oz jar of seedless blackberry jam
  • 1/2 cup honey or brown sugar for amber
  • 1/8 cup lemon juice
  • 1/2 tsp brewers’ yeast (I use wheat beer yeast)
  • 1 tsp cinnamon
  • 1 tsp nutmeg
Primary Ferment: one week
Secondary Ferment: one week in bottles

Sanitize! Sanitize! Sanitize!
I know most of you have heard it before, but sanitize everything with a bleach solution or a commercial sanitizer. Bleach and sanitizers will come with instructions on how to dilute to be the most affective. This means pots, utensils, fermenting appliance, bottles, and pretty much anything that is not going directly into your brew. If you win the sanitation battle you will make a good brew 90% of the time. Now, on to the instructions…

-Pour roughly 1 gallon of cold spring water into fermenter
-Bring to boil the remaining water and ingredients in a large pot (this is the wort)
-Pour “wort” into your fermenter, add brewers’ yeast and cover (not air tight)
-Wait at least a week before you taste test. It should taste yeasty or like flat beer, not sweet.
-Bottle your beer. Use extra fermentable sugar to give your beer its needed carbonation. Add 2.5 tsp sugar per 32 oz bottle.

Note: Put the hops in a coffee filter wrapped with a rubber band to avoid debris in your brew.
